Effects of ¥á- and ¥â-Chitosan Treatment on Growth and Selected Quality of Soybean Sprouts

Abstract
The effects of chitosans, prepared from crab shell (¥á-chitosan) and squid pen (¥â-chitosan), on growth and selected quality of soybean sprouts were evaluated. Soybeans were soaked in water (control 1), 0.05% acetic acid (control 2), 0.05% ¥á- and ¥â- chitosan solutions for 8 hr and then cultivated for 3 days at 27¡¾2 ¡É. Chitosan treatment increased the total weight of soybean sprouts by 7.1~7.6% compared with control 1, and the effectiveness of chitosan treatment was not affected by chitosan types (¥á- and ¥â-chitosan). There were no significant differences in hardness and nitrogen content among four treatment groups. The total free amino acid contents of soybean sprouts treated with ¥á- and ¥â-chitosans were higher than those of controls 1 and 2, mainly due to the increased asparagine. DPPH radical scavenging activities of soybean sprouts treated with water (control 1), ¥á-chitosan and ¥â-chitosan were comparable but higher than that of control 2. Increased shelf life of soybean sprouts treated with ¥á-chitosan, compared with control 1, was not observed during storage at 10 ¡É for 21 days.
